These Proven\u00e7al Lauranne almonds come from our orchards, which are located close to our confectionery in Saint-R\u00e9my-de-Provence. They are packed into this jar exactly as they are: whole and natural. Simply the almond in its purest form.\r\n\r\nOur harvest is the result of a full year's care. We tend 2,150 almond trees throughout the year and oversee every stage of the production process, from cultivation and harvest to cracking in our shelling facility and blanching in our workshops. This fully controlled process gives these almonds their distinctive flavour. If you have tasted our calissons, then you will already be familiar with this almond \u2014 it is what gives them their character, roundness and Proven\u00e7al fragrance.\r\n\r\nThe Lauranne variety has a full, gently sweet flavour with light buttery notes, and the fine aromatic quality that sets almonds from Provence apart from imported varieties. When eaten as they are, they reveal a freshness and intensity rarely found in standard almonds. The difference lies in the care with which the fruit is grown, harvested at maturity and processed locally, as opposed to a standardised product from afar.\r\n\r\nThese almonds can be enjoyed on their own as an aperitif or afternoon snack, or used to elevate all your baking, including tarts, financiers, cakes and homemade pralines.
