These chocolate almonds are not the kind that you eat one at a time. The principle is simple, the effect irresistible: a roasted almond at the centre, a fine layer of nougatine scented with Bourbon vanilla and herbs from Provence, a smooth white chocolate coating, and finally a dusting of cocoa powder to offset the sweetness with a touch of bitterness. With each bite, the textures unfold in succession \u2014 the crunch of the almond, the delicate snap of the nougatine and the melting chocolate \u2014 while the flavours reveal themselves in layers.<\/p>\n

The recipe contains a distinctly Proven\u00e7al surprise: herbs from Provence are subtly blended into the nougatine alongside Bourbon vanilla. This subtle, almost elusive note lends these chocolate almonds a unique character. It lingers on the palate after the cocoa and chocolate, prompting you to take another bite to confirm the sensation.<\/p>\n

The composition comprises almonds (18%), hazelnuts (6.5%), white chocolate (48%) and cocoa powder (3.5%). The hazelnuts, paired with the almonds in the nougatine, contribute a rounded flavour and a subtle woody aroma.
