Confiserie Lilamand in the spotlight on “À vos Régions” TV show

If the name Van Gogh is inextricably linked with Saint-Rémy-de-Provence, so too is that of Lilamand, synonymous with gourmet delights and artisanal expertise. The TV program “À vos Régions” visited our confectionery to film what has been at the heart of the company for five generations: the production of candied fruit.

In this video, Pierre Lilamand takes you behind the scenes of an art handed down from father to son. You’ll discover how each fruit is immersed in a sugar syrup, bathed seven or eight times in a process that lasts nearly two months. In front of the original copper basins, a whole heritage comes to life: that of a precious skill, shared between old and new generations over the years.

The camera also captures the final stage of glazing, when a thin film of sugar envelops the fruit to give it its characteristic shine. Once dried on a grid overnight, the glazed candied fruit is sent to our boxes and ballotins, ready for shipment all over the world. From Fauchon in Paris to Harrods in London, some of the world’s best-known names place their trust in our artisanal confectionery from Provence.

The video ends on a note for the future: Pierre’s children are already having fun making up their own boxes of candied fruit and calissons in the store. All the more reason to look forward to the sixth generation of Lilamand confectioners.
